- 4 hard boiled eggs, chopped
- 1 celery stalk, finely chopped
- 2 tbsp mayo
- 1 dash white wine vinegar
- 1/2 tsp yellow mustard
- finely shredded arugula or fresh chives
- salt to taste
- optional additions: chopped fresh dill, minced shallot, lemon juice, paprika, Tabasco sauce…the list is endless.
Mix. If too dry add more mayo until the desired consistency. Serve over well toasted multi-grain bread as an open sandwich or between un-toasted, de-crusted white bread (as in tea sandwiches).
