Carrot Salad with Mint and Granny Smith Apples

Ingredients (for 2-3 servings):

  • 3 carrots, grated
  • 1 granny smith apple, diced
  • 3-4 tbsp chopped fresh mint
  • 1/2 cup mayo
  • 2-3 tbsp milk
  • 1/4 tsp ground cumin
  • salt
  • handful of roasted pepitas (optional)

Method:

  1. Thin the mayo with milk and stir in cumin.
  2. Mix carrots, apple, mint (and pepitas) in a bowl with the mayo mixture.
  3. Add salt to taste.

Egg Salad Sandwich

  • 4 hard boiled eggs, chopped
  • 1 celery stalk, finely chopped
  • 2 tbsp mayo
  • 1 dash white wine vinegar
  • 1/2 tsp yellow mustard
  • finely shredded arugula or fresh chives
  • salt to taste
  • optional additions: chopped fresh dill, minced shallot, lemon juice, paprika, Tabasco sauce…the list is endless.

Mix.  If too dry add more mayo until the desired consistency.  Serve over well toasted multi-grain  bread as an open sandwich or between un-toasted, de-crusted white bread (as in tea sandwiches).
