Spicy Sausage Squashy Spaghetti

This was UH-mazing! I love spaghetti squash and the zucchini really adds to the meat sauce (don’t leave it out!).  It was so good I had to give up my last precious bites to Brian– he was foaming at the mouth for more!


  • 1/2 lb. spicy sausage
  • 1 shallot, diced
  • 2 garlic cloves, diced
  • 1 jalapeno, diced
  • 2 tomatoes, chopped
  • 1 tbsp ketchup
  • 1 tbsp paprika
  • 1 zucchini, chopped
  • spaghetti squash, baked*
  • salt & pepper
  • pinch of cumin (optional)
  • pinch of oregano (optional)

* baking spaghetti squash:  Cut the squash in half, scoop out the seeds, in a casserole dish place the squash cut side down in an inch of water, bake for 30-45 minutes at 350 degrees.  When it’s done, use a spoon to scrape out the flesh.


  1. Brown the sausage over medium heat with the shallot, spicy pepper, garlic, zucchini, and tomatoes.
  2. Add the ketchup, paprika, and salt & pepper to taste.
  3. Serve over spaghetti squash.
