This is a recipe I learned at a friend’s BBQ. It’s healthy, delicious, and an excellent ending to the grill set. It’s especially good if you were over-zealous at the market when peaches were on sale and also a good way to use up peaches too mushy to enjoy fresh.
- Fresh Peaches
- Fresh Thyme
- Olive Oil
You’ll also need a hot grill or a broiler on high.
1. Cut the peaches in halves and pit them.
2. Drizzle olive oil over the flat, cut side of the peaches.
3. Sprinkle thyme leaves on the flat side.
4. Grill them flat-side down until they’re juicy and bubbling. About 15 minutes. It takes longer in a broiler. When I made these in my oven last, I faced the peaches up towards the fire, it turned out OK. I much prefer these from a grill though.
